Pesto toasted cheese sandwich

Does your menu change in the summer?

It seems the market has an abundance of summer fruits and vegetables. This year’s corn on the cob is deliciously sweet. We like it grilled but it seems too hot to fire it up so boiling it works well too.

I try to use the oven less during the summer. Like most places, our central air is on all the time and yes, I know our oven is new and doesn’t put out a lot heat but…..it makes me feel better to freshen things up and cool things down.

Summer also seems to invite a little creativity and experimenting with old favorites. 

Grilled cheese sandwiches are typically reserved for fall and winter –  until this fresh take on a classic favorite came along.

You’ll need:

One or two roma tomatoes.

Your choice of whole grain bread

Pesto

Shredded mozzarella cheese

Cilantro (optional)

Amounts are at your discretion

  1. Toast bread- 2 slices for each sandwich
  2. Spread pesto over bread
  3. Add sliced tomatoes, cilantro, and shredded cheese
  4. Your choice of whole grain bread
  5. Cilantro (optional)

Spread pesto over bread

Add sliced tomatoes, cilantro, and shredded cheese

Pop in the microwave a few seconds to melt cheese.

Customize the ingredients and amounts to your liking.

This is so quick and easy to make you’ll have it on regular rotation this summer.

Add some summer flavor and serve with ice cold watermelon wedges. YUM!
