Summers of my youth were filled with sleep away camps, Vacation Bible School, visits to family and the delights of summer desserts.
Looking back, I was surrounded by good cooks who made our picnics complete with homemade potato salad, watermelon chilling in the ice chest, and the trusty ice cream maker that mama seemed to especially like. Now that I think about it, I’m not sure there was any ice cream she didn’t like.
Those were all delicious but it was the cobbler that combined summer fruit (most often peaches) with the doughy goodness under a light brown crust.
I’ve scoured recipes over the years searching for one that would duplicate my memories this summer favorite. Many had the fruit on top and I knew that wasn’t it.
It was a friend who shared his mom’s recipe that looked like it could be the one. It also had the added bonus of being extraordinarily simple. Yes, please!
If you like sweet, buttery dough with fruit baked in this is the cobbler you need to make. And if you’re like me, it will bring back fond memories of family summer picnics and cookouts. Food has that magical way of preserving those precious times.
