Spice Up Mealtime with Cajun Shrimp

Have you found yourself cooking at home more? A lot more? Me too and it gets a bit monotonous. 

Like I do with for so many other things, I turned to Pinterest.

I don’t like overly spicy and this is not. My husband adds red pepper to everything he eats – key to a happy marriage. 

I buy the bag of frozen shrimp from Walmart Grocery. We’ve never been disappointed with it so unless you have to have the fresher kind this works well. 

Serves 2 – 3

Measurements are approximate* and to your taste

Ingredients

2 T olive oil

1 small red bell pepper, chopped small

1 zucchini, chopped small

1 celery stalk, chopped

1 can diced petite tomatoes in juice

Cajun seasoning (to taste)

1 T garlic from jar

1 T chili powder

1/4 lb. frozen shrimp, thawed and tails cut

1 bag 90-second rice your choice of flavor

Directions

Heat 2 T olive oil in in skillet 

Sauté garlic, chili powder, and Cajun seasoning until combined. 

Add chopped bell pepper and zucchini; sauté over medium heat 5 – 7 minutes.

Add can of diced tomatoes.

When mixture starts to simmer add chopped celery.

Heat until all vegetables are tender.

Add shrimp and heat thoroughly.

Cook rice. Serve shrimp mixture over rice.

*I take some liberties with measurements. Be guided accordingly.
